How should I design my kitchen?

So I’ve decided to just build my own home. The foot print of the kitchen is 13 x 18. The side that is 18′ opens into the breakfast area then the family room. One one 13′ side, we want a sink and two dishwashers. On the other 13′ side we want a 3′ refrigerator, two sets of integrated freezer drawers next to that and then a gaggeneau convection and steam oven. Above the two freezer drawers, we are putting the microwave and a water dispenser built into the wall.

The problem is the 18′ wall. There will be a huge center island measuring 9′ x 7′. We dont know what to put there either. We definitely want to have the integrated steamer and fryer by wolf. We dont know if we should get a griddle or grill or both. We cant decide between induction cooking, gas, or both and we also dont know how many hobs would be a good number. The integrated modules are 15″ each to having too many in a row will take up too much counter space and not look right.
We dont really want to have cooking things on both the wall and island.
What should we do with our space?
I dont know which option is best. We can either do both gas and induction, or we can do all gas and have a griddle. I kinda like induction and I dont know if a griddle is any better than a frying pan.
